The reason BotW doesn’t have three is twofold: With the “multiple autosave + one manual” system, it would be very hard to organize with three separate playthroughs. Every switch profile gets its own set of saves, so you can treat the different profiles as the different save-slots like prior games (except you can have far more than three).
You can have one save file and one master mode save file per user on the switch. If you want new files, you can make a new user on your switch and use that one.
