As you say, Ryze's passive is in two parts: gaining damage from bonus mana, and gaining bonus mana from AP. The damage gained from mana scalings does not show up in the passive itself. It is shown for each individual basic ability through their mana scalings. You can see this in the wiki. The percentage shown in the passive is the mana increase ... With Riftmaker you have a bad early and mid and a bad-decent lategame. It's a fun build that works when you're better than your elo, but not on serious competition i think. No pro ever builds or even tries Riftmaker also. I've seen some pros go Crown, seraphs, Rylais.
