your MLC path seems to be set completely wrong. mlc01 is the folder that contains all updates, savefiles etc. and is located in Cemu folder by default. go to general settings and reset the path to wherever it is. btw, this is a setting you'd have to actively change, it doesn't just happen on its own. so saying you "didn't mess with anything" is ...
